Is there a way to see how much time spent playing the game one has? It must be stored somewhere since the ranking system is based off it.

Ask a moderator to find it out for you. They have access to a command that does that. The moderators have a wrench (for now) next to they're names.

If you see me around the lobby, you can ask me(PT_Paulada) to do that for you. If i'm not busy, i'll certainly do so.

I thought about that but the problem is that the command allows for checking the game time of everyone, not just themselves.
