k, i wont give a "generic recepie" i will tell you exactly wat i do.
where i buy, the brands and the preparation. you can vary if you want,
but then it wont be the same. this requires a charcoal grill, i dont
reccomend you use a gas grill. as i earlier said, you can vary it but it wont
be the same. **end disclaimer**
k, go to costco. buy a pack of their baby back ribs. hopefully you know
how to pick pork ribs and tell them apart as to which ones are higher
quality than the other (looking at same packs of baby back ribs of course)
take them home. also you want to stop by a grocery store on the way and
buy 2 more things.
KC Masterpiece BBQ sauce.
Spice Islands Steak Seasoning.
tinfoil pan, (the kind you throw away when done) make sure it's smaller
than your grill and can fit inside it between the charcoal
I hope you also have a clean brush at home or get one too. (for basting)
now you're home.
take ribs out of their package.
wash them.
now you must tear of the membrane that is on the back of these ribs off.
you'll find a small peice to hold and pull to peel away this layer of
membrane off the back of the meat. do this with all the pieces, it will
expose the meat on the back the same way its exposed in the front.
also this will help the meat (fall off the bone) as you eat it later
k, so now you have a bowl of washed, peeled ribs.
salt them, shake them with the steak seasoning you bought. be somewhat
generous (not exessive) with the seasoning as pork readily soaks up
flavor and asks for more, try to cover the front the sides and the back
with it evenly. you wont have a chance to use seasoning later as you do
at this time while the the meat is still on your ------- counter.
*light grill*
start your charcoal, wait till it burns off and starts to smoulder. take this
charcoal and arrange it in your grill so that there 2 piles of it on each side
of the grates so that there is no charcoal directly underneath your meat.
take the tinfoil pan you bought and pour some water in it maybe so it's
half an inch or or of water (1.5 - 2 cm) place foilpan between piles of
charcoal.
put ribs on the grill. put cover on the grill, wait about 45 minutes or more
open grill and turn over the meat. meat should have joice on it surface.
*close grill*
wait another 45 minutes to hour depending on ammount or charcoal in
dere
you've flipped the meat 1 time the whole time it's been on the grill.
k, by now you will have a bowl of bbq sauce you bought and a brush.
brush can be the kind you buy from hardware store (wash it first) or from
the grocery store (wash it first) dont use synthetic brushes.
when you feel the meat is alsmost done you will lift the grill and brush
the meat with the bbq sauce the same way you covered it with seasoning
front, back, and side, making sure you have brushed every possible area
of the meat with the sauce. you arent trying to drown the meat in sauce.
you are brushing on the sauce evenly over the entire surface area of your
meat. covering it comeletely. leaving no meat without a coat of sauce.
you wull notice that the seasoning is not brushing off with the brush but
is mixing with the sauce evenly and uniformly. this is the goal. you do this
quickly and skillfully, as you dont want to take meat off grill of burn
yourself. if you have a pair of tounges (the scirssor kind) you will win.
k, now the meat is covered, cover the grill and wait 5 - 10 minutes.
the smell now will be brutally delicious. resist it.
open the grill and for the second time turn over the meat. feel free to
baste a little more sauce on at this stage if you want.
wait another 5 - 10 minutes. this is the probably the longest 10 minutes
you will ever have to wait. as the smell will begin to make you want
skip any further waiting.
your ribs are basically done. remove them from grill and cut off a piece
and taste it. feel free to wrap them in tinfoil and wait for them to cool
down they are very good when lukewarm and room temp as well.
