Leads me to believe that there is a "right version" of this software that I should be using in anticipation of 0.79.1+

I don't believe anything has changed mid-79. And do you mean 0.79.[number greater than 1] ? Because normally 0.X.Y+ means the builds right out of the master branch that don't happen to be a release.

I was hearing muttering about "one more" release over this next week-or-so, to address a few remaining bugs, such as the AIs crashing.

I didn't know whether that would be considered 0.79.2 or 0.79.1.5, as an interim fix.
