Indeed, the reason you can recover data at all is because it isn't really deleted to begin with, it's just reflagged as free space.

So the more you write to the disk the more data is written in those sectors flagged as free space that used to hold other stuff, and that 'other stuff' is then lost forever, unless you're the CIA and have electron microscopes and hundreds of hours of time and countless funds.

So as time goes by that Operating system is overwriting all your work as time goes on.
