Mumble fails, fewer options, less control and you can't change the voice activation level.

Ya you can. That said, mumbles interface makes baby jesus cry.

It seems it's not possible with version 1.0.0.
With the latest svn version you can - they have a audio wizard for that. But as indicated, that version does not work with the server.
