I was amazed by this critter:

This releases small bubbles which collapse when the water pressure normalises, unleashing tremendous amounts of energy. This process, called cavitation, is so destructive that it can pit the stainless steel of boat propellers. Combined with the force of the strike itself, no animal in the seas stands a chance.
It punches so fast it can BOIL WATER.

Incorrect. It creates a void filled with nothing. This bubble of nothingness collapses upon itself, heating up to the temperature of the sun's surface and releasing a type of light. IIRC, it releases sound waves or something.

They also taste sweeter than lobsters apparently, though I admire their punch and their most-advanced-eyes-of-any-animal so much that I'd probably never try them.

So who'd win in a fight?
A mantis Shrimp, or a Pistol Shrimp.
Totally mantis if it caught the pistol shrimp off guard.

Depends on who got the first hit and where. If the hit was in any critical locations, or aimed at the enemies offensive weapons then whoever got the first hit would win.

I am personally pulling for the Mantis Shrimp, since it has heightened senses and is a good deal larger :-)

I want the Mantis Shrimp to win, because of how obscenely violent they are, yet they pull their punch so as not to kill other Mantis Shrimp.

I can see the great Innovation coming out of this (CarviationTorpedos- ups we already have those) - well then let´s go for selfopening Mantis Shrimpcans - there is a biological trigger on the inside, you hit a spot on the Tintop, and they hack&slay there way into the frying pan...

Nature cares for you (at least the first 50 years - after that Garanty runs out)

Or imagine the Galleionlamp - filled with shrinked Shrimps, gentically oversized attack mandibels - and a little Drummerboyshrimp - and then 1-2 you get biological lightsource - just have to connect it to the "Feeder" (Diamond)

Or just imagine the Shrimpsrocket, with a Warhead of some Million artifical claws, they dig through metall, not just by pressure, just by hard work! Dig in Boiz!!

What I know about physics tells me that the shrimp should "fly" backyards after punching, but it seens they dont... anyone knows why? :)

The Hit is so fast - and through the caviation meets nearly no Resistance until it beats its target - after that there is a sort of spring mechanism, and the so softed backblow Inertia meets the Wallf of Watereffect, which would slowdown a solid object to nearly no speed at all. There is a funny experiment on that Thing: Just get to a high cliffs edge and do (or make somebody doing it for you) a un-professional divejump- you will see (for the smallest parts of a second)that water can be solid as concrete

Just joking- well this are the Spring Boards, lets assume there is at least one Irony on Ignorelist Lurker - So Don´t you dare to try this, if you don´t want to die.
