I can't really say much about TA music (what am I doing here then?), because the only time I played the actual non-spring version of TA was ~6 years ago on a win98 PC with no sound.
However, I'm downloading the torrent atm, and from what people are saying I reckon I can make some pretty good recommendations:

If you want Frank Klepacki music, dig out your copy of C&C (and sequels), and see what fits the bill. Off the top of my head, I can think of one track that is "orchestral", called "In the Line of Fire", from the original C&C.

For exciting orchestral music, see Stravinsky's Rite of Spring FTW!
Also see most of Mahler's and Beethoven's symphonies. Whoever mentioned Mozart is obviously deaf: his "symphonies are possibly the most boring piece of crap I have ever come across in my life (actually not quite). Haydn wrote >100 symphonies, but they don't count.
In fact, and music earlier than Beethoven can't really be said to be "orchestral" in the modern sense. For example, Bach wrote the best music in the whole of history, but it's hardly "hardcore" orchestral (same for Byrd).

Byrd is quite cool. I'm a fan of some of his a capella stuff tbh.

But uh, Mozart dull? Listen to some of his later works (duets with violins and other stuff f.ex). Or, like i said, listen to his requiem. His requiem is, IMHO, one of the most fantastic pieces of music ever conceived. He wrote it on his death bed, he knew he was dieing, and he knew that it would be the last thing he wrote. It's haunting as fuck.
