Tremulous is pretty interesting. It's somewhat like Natural Selection except more FPSy and completely free/open source. If you're new don't be a builder though OK :\

Well not open-source as far as I know, but here are two popular freeware games:
Cavestory (2d shooter, i.e. best game evar)
http://agtp.romhack.net/project.php?id=cavestory
and
Warrock (3D FPS)

Space flight FPS/Strategy game:
Allegiance
Its pretty sweet but very hard to learn.

Allegiance has a learning curve slightly higher than Mount Everest...

Sauerbraten. Neet, sweet, simple FPS game, made from scratch. Used to play a little NetPanzer... before I decided that the unit AI was too stupid to tolerate. Warsow is a very challenging but incredibly fun stunt-oriented FPS deathmatch game. Then there's OpenLieroX, an opensource fork of LieroXtreme. And Armagetron, which everyone loves.

These are some of the open source games I've played at least once. Some of them can appeal real gamers, but most of them are smaller and more "primitive" games.
RTS:
- Globulation
http://globulation2.org/wiki/Main_Page ; unique but fun game to play once and a while.
- Warzone2100 Resurrection project:
http://wz2100.net/ , open sourced commercial rts.
- UFO Ai,
http://ufo.myexp.de/ ; bigger and more active project then the others I already mentioned. Very original and definitely worth the try.
- Widelands
http://xoops.widelands.org/modules/frontpage/ Settlers II remake
- Freeorion
http://www.freeorion.org/index.php/Main_Page Project in early development, maybe interesting.
MMORPG:
- Planeshift
http://www.planeshift.it/ (Not completely open source). Very nice game.
FPS:
Nexuiz:
http://www.alientrap.org/nexuiz/ Shooter.
That's all I could think of atm.

I love the danger of the Spring curve. You think you're on solid ground, and then you play another mod.

Hurrah for Nexuiz+Warsow. Both are good games and are only getting better. Too bad that the stupid realism in FPS games is still popular...
