Shot myself in the leg with an airsoft pistol to see if it hurts. Yes. Yes it does. But probably from a longer distance it wouldn't be very bad... Also as the air cartridge loses pressure it probably would be a lot less painful.

It depends on the fps of the weapon caydr, airsoft weapons do not all fire at the same fps.
Yes, they can take out an eye etc.

Does the fps really change that much? I thought the cartridges were standardized.

In my experience most airsoft weapons are AEG (automatic electric guns). And those aren't standardized - you can 'tune' them by replacing battery, motor, gearbox, spring, piston, internal barrel, etc. This results in very different fps. Plus some (Chinese) manufacturers sell AEGs with high fps out of the box (usually because the spring is too powerful compared to the rest of internals, so they tend to break soon if not 'downgraded').
Tuning of 'compressed gas' guns is also possible, but it takes somewhat more skill and so isn't done quite so often.
