Ok; I have the texture, and the unit model itself, but I do not have a unitdef or a script, nor do I know how to make either for an airship.
Can anyone tell me what I need to have in my unitdef and script for the airship?

This just needs to be a bare minimum, because the airship will be unarmed

I recommend copying once from a existinggame or knorkes

There is a flying unit in it.
Its a little dated, but it has the benefit of having helped alot of people to find out what button does what thing, without getting stuck in the usual programmer turned lawyer turned mathematician - "By definition a complete starting game should contain-" advice, that gets you nowhere, but claims to be the most accurate attempt to help you.
